Quality is our foremost priority when it comes to olive oil. Unlike some regions where quantity may overshadow quality, we hold every step of the process in high regard – from harvest to pressing, filling, and transportation. This dedication translates into specific practices for us:

1. Comprehensive Organic Tree Care: Our trees receive meticulous organic care from start to finish.
2. Exclusive Use of Organic Fertilizer: We opt for organic fertilizers whenever possible, avoiding animal-based alternatives.
3. Zero Land Pollution: We maintain a strict policy against any form of littering, ensuring no plastic, cigarettes, bottles, or other debris on the land.
4. Sustainable Use of Leaves: Rather than burning, we utilize leaves to benefit the trees.
5. Branch Recycling: Shredded branches return as nourishment for the trees.
6. Timely Harvesting: Olives are picked while still green (not fully ripe) to maximize polyphenols and folic acid content.
7. Vegetable Oil for Tools: Only vegetable oil, not motor oil, is used for equipment like the motor/electric saw to prevent mineral oil hydrocarbons (MOAH) contamination.
8. Optimal Olive Loading: Sacks are filled up to 50-60% capacity, never stacked to avoid damaging the olives.
9. Minimal Contamination: We aim to pack sacks with olives exclusively, minimizing the presence of leaves, branches, or other debris to preserve oil purity.
10. Swift Processing: Olives are promptly taken to the mill after harvest to preserve their integrity and maximize beneficial properties.
11. Harvesting with Reverence: Each olive is gathered with a sense of appreciation for this natural gift of health and vitality.
12. Expert Milling: Olives are processed in a reputable mill, ensuring temperatures stay below 35 degrees Celsius.
13. Stainless Steel Maturation: Prior to bottling, the oil is allowed to rest in stainless steel tanks (not plastic) for one to two months.
14. Temperature-Controlled Transport: Rigorous attention is paid to maintaining optimal temperatures during transportation.
